Sushi Fumi

Chef Fumi Atsumi educated at the Tokyo Sushi Academy, where she earned her Sushi School Diploma in 2016, Fumi mastered traditional sushi preparation techniques. Her expertise was recognized in 2019 with a special certificate, awarded in the presence of the Japanese ambassador. For Fumi, the essence of exceptional sushi lies in the freshness of the rice.

Konishi is one of the oldest sake breweries in Japan, with a family history dating back to 1550. The brewery is today owned by the 15th generation. The house brand sake Shirayuki (“white snow”) is based on this family tradition and age-old brewing techniques. Konishi also markets a range of innovative, premium sake under its name.
